Basic Butchery Course Vol. 1
This course will give you an understanding of how the animals are shaped and build and how to break them down into their components using the same methods.
In this course we focus on the Lamb, the Goat and Beef and use the knowledge and knowhow from one animal to teach us about the next.
Go back and forth, to get a real sense of what you are learning. This is your safe zone to look again and again and to revisit an area or action that you missed or didn't get right the first time.
In this course we follow the animals from whole to individual cuts and parts. Pay attention to the similarities between the animals. If you understand one, you understand them all.
The "Test" is a tool to get you to focus and really understand the techniques.
