Banana Bacon Pancake with Beetroot Purée and Tropical Fruit

This dish uses whole fruits and banana peels, combining high nutrition with reduced waste and plant protein.

Ingredients:

  • 200 ml soaked rice (10 min), blended with water and a pinch of salt
  • 1 beetroot, blended with chili and lime to make purée
  • Slices of pineapple, mango, and watermelon (marinated in lime)
  • Pickled red onions

Banana bacon:

  • Banana peels
  • Marinade: soy sauce, smoked paprika, oil

Instructions:

  1. Fry the rice batter into thick pancakes.
  2. Marinate banana peels and fry until crispy.
  3. Assemble pancakes with purée, fruit, pickled onions, and banana bacon.
