This dish uses whole fruits and banana peels, combining high nutrition with reduced waste and plant protein.
Ingredients:
- 200 ml soaked rice (10 min), blended with water and a pinch of salt
- 1 beetroot, blended with chili and lime to make purée
- Slices of pineapple, mango, and watermelon (marinated in lime)
- Pickled red onions
Banana bacon:
- Banana peels
- Marinade: soy sauce, smoked paprika, oil
Instructions:
- Fry the rice batter into thick pancakes.
- Marinate banana peels and fry until crispy.
- Assemble pancakes with purée, fruit, pickled onions, and banana bacon.
