Fried Rice Dessert with White Bean "Mousse" and Baked Fennel

Uses leftover rice and beans in a dessert with high nutritional value. Low-energy and scalable.

 

Ingredients:
Soaked rice, fried and blended into a base
100 ml white beans (soaked and blended)
50 g white chocolate or coconut cream
1 fennel bulb, sliced and baked with honey and lemon
Mango marinated in lime and chili

 

Instructions:
Fry and blend rice to a crunchy base.
Make mousse from beans and chocolate.
Assemble with baked fennel and marinated mango.
