Many people do not spend enough time on this point, however this is what will give you the best basis for your product or dish.

when a stock is not cleaned, it will slowly infuses with the fat and leftover impurities from protein breaking down. This will make it bitter and muddy and can make it impossible to reduce into a sauce without it separating since it contains to much fat.
